Focused on a rural tradition: St. Martin’s Day

 
 

By tradition, mid-November is a key period for fattened web-footed bird production:

 


Because in the past the seasonal geese egg-laying took place in spring, the newly born birds were consequently raised during the summer and fattened right after the maize collection (end of October, early November).

 

At the start of the cold season, mid-November represents the return of early markets in these production regions. In addition, landlords used to take this opportunity to select some fattened geese from the farmers as payment for using their land.

People have been celebrating St. Martin’s Day for centuries because, as the legend has it, Saint Martin’s destiny had been jeopardised by geese screams: it is said that in order to escape from the nomination of his bishop, Saint Martin hid in a barn filled with geese whose screams eventually betrayed his hiding-place!
In the region of Alsace, among others, geese from St. Martin also represent an occasion to celebrate the end of work and enjoyment of the day.
For ages, foie gras markets have been mainly concentrated in the southwest of France.

Outside of the southwest of France, several local municipalities organise dairy and meat markets around the end of the year’s celebrations, such in Normandy and so on…
