Only a few kinds of web-footed birds are raised to produce foie gras. In France, the production is organised as follows:

 

 

 

 

The Grey Landes goose (Anser anser)


This type of French goose has the advantage of accumulating lipids in its liver, as opposed to the Polish goose for instance, which mainly processes carbohydrates into fat outside the muscles, namely in contact with the meat.

 

 

 

 

 

 

Muscovy duck (Cairina moschata)
 

The Mulard duck, is issued from a natural cross-breeding between a male Muscovy duck and a common female duck (Anas platyrhynchos)

  Nowadays, the Mulard duck is mostly represented in all French stockbreeding. It is a strong animal that produces a high quality meat and an excellent foie gras.
